Independance Day Special: Vegetable Croquettes
Chef Choong Chew Loon gives us a very popular yet delicious recipe of the vegetable croquettes to savour on the eve of Independence day. You can enjoy them by making and sharing it with your family and friends on this day.
Since it's an easy recipe and not too time consuming, you can definitely have it with a hot piping cup of tea or with some chilled cold drink. Serve it with any kind of a chutney or a dip to add on to the taste.

Serves: 2-3

Potato - 2 medium
Cabbage - 1½ cups
Arbi - 2 small
Carrot - 2
Sweet chilli sauce - 6 tbsp
Salt and pepper - 1 tsp each
Plain flour - more than ½ a cup
Egg (beaten) - 1
White fresh bread crumbs - 150 g
Oil - for deep frying

Chop the potato, carrot, arbi and cabbage into small pieces. Boil these vegetables.
Roughly mash the potatoes and other vegetables and mix them with sauce.
Add salt and pepper to this.
Divide into equal portions.
Form each into a sausage-shaped croquette.
Roll each croquette in flour, egg and then the breadcrumbs to coat them well.
Heat oil in a large frying pan.
Gently shallow fry these in batches until the croquettes turn golden all over.
Drain on a kitchen paper before serving these with a salad.
