Recipe Type: Bread
Serves: 2 loaves
-
For leaven
- 1 tablespoon of sourdough starter
- ⅓ cup of water
- ½ cup of all-purpose flour
For dough
- 2½ cups of water divided
- 1 tablespoons of salt
- 5½ cups of all-purpose flour
-
- First of all, you need to ensure that your sourdough is active. If you have kept it in the refrigerator then take it out 2-3 days prior to making.
- You need to make the leaven a night before the day you want to prepre sourdough bread. This is because you need to let the leaven sit overnight.
- For this, mix all the ingredients required to prepare leaven in a large bowl and form a thick batter.
- Now cover the batter and let it sit overnight or for 12 hours atleast.
- After 12 hours, you need to check if the leaven is ready or not. For this, see if bubbles have formed on the leaven batter or not. If you see bubbles then this means that the leaven is ready to use. You can also drop a spoonful of batter in a cup of water and if the leaven floats then it is ready to use.
- In another mixing bowl, add 1 tablespoons of salt in ½ cup of water and stir until the salt gets dissolved completely.
- Add 2 cups of water for dough in the bowl containing leaven and mix well.
- It is possible that the leaven may not get fully dissolved and some lumps may form.
- Now add flour for the dough in the leaven and water mixture. Mix well until the dry flour gets mixed with the leaven.
- Now cover the dough with a damp cloth or plastic. Let the dough rest for 3-4 hours. This will ensure that the dough absorbs the water nicely.
- After this, pour the dissolved salt in the dough.
- Mix well by squeezing the dough. During this time, the dough will seem wet and loose.
- Now it is the time to fold and lift the dough while holding the dough one side. You need to fold the dough four to five times in a clockwise direction.
- After this, let the dough rest for 30-40 minutes and then repeat the process. You need to repeat this process 5-6 times. This will usually take 3 hours.
- Once you have folded the dough 5-6 times, you need to let the dough rest undisturbed for 40-60 minutes.
- You will see that the dough turns out to be smooth and tight as you fold the dough.
- Also, the dough will puff and will seem to be slightly larger than when you started working on it.
- Now this is the time to divide the dough into two equal parts without deflating the dough.
- Sprinkle some loose and dry flour on both the dough.
- With the help of a pastry scraper give a round shape to both the dough.
- Let the dough rest for another 25-30 minutes.
- Now take two clean mixing bowls and place kitchen towels in them. Dust the towels with flour in such a way that a layer of flour forms on the towels.
- Now lift one of the doughs and flip it upside down on the kitchen working board.
- This will bring the un-floured side on the top. Now you need to pinch the lower part of the dough and gently pull it up. After this, fold the pulled part towards the centre. Repeat this, till you cover the top of the dough completely.
- Repeat this with another dough as well.
- Now place the dough in separate bowls and rest it for 3 to 4 hours.
- After this, you can bake the loaves of bread in an oven on 450 degree fahrenheit for 20-30 minutes.
- After baking the loaves separately, score them with a knife.
- After scoring you can again bake the cake at the same temperature for 10-15 minutes.
- At this point the loaves will seem to be dry and golden in colour.
- Continue baking until the upper crust is baked completely.
- Take out the loaves and let them cool down at the room temperature.
- Serve by slicing the loaves.
- For this, mix all the ingredients required to prepare leaven in a large bowl and form a thick batter.
