How To Prepare The Famous Mumbai Cutting Chai Recipe At Home
Cutting chai is a regular feature in Bombay and well loved and consumed as it is not expensive. Cutting chai when literally translated, means "cut into half' which means you get only half a glass of tea, which is a small quantity. It was offered only at chai stalls but now the modern cafes have taken a cue from it and serving the chai with attractive accompaniments.

It is half a portion of tea which is served in special glasses instead of porcelain China. This is a strongly flavoured Chai that is made with black tea, milk, cardamom powder, grated ginger and sugar. Cutting chai comes as a single order which you can share with friends. It is sometimes called a 'one-by-two' order. Cutting Chai Masala has a heady fragrance and the frothy and airy tea that is prepared is yet another story of its own.

Tea Powder-2 Tsp of Assam Tea
Sugar-2 Tbsp
Full Cream Milk-¾ Cup
Water-2 Cups
Cardamom / Elachi-3
Ginger (Grated)- 1 Inch

Pour a cup of water into a saucepan.
Crush three pods of cardamom and add to the water.
Grate an inch of ginger and add it to the water in the saucepan.
Add 2 tsp tea powder or add it as per your taste.
Add sugar and boil for 5 minutes on medium flame. Boil more if you want it strong.
Now pour in ¾ cup of milk.
Boil again for 2 minutes, and keep stirring it.
Filter the chai now, leaving the tea residue in the filter and pour into small glasses.
