Curd, or yogurt, is one ingredient that finds its way into countless Indian dishes, especially in South Indian cuisine. From a simple pachadi to a hearty avial, this creamy, tangy milk product is indispensable. But sometimes, even the most familiar ingredients can spark a bit of creativity in the kitchen.

My Backstory

Sundays at home have always had a special vibe. Being South Indians, we usually whip up classic staples to pair with rice-pulissery, pacha moru, avial, and the like. But one Sunday, my dad decided to surprise us with something different.

It began when he pulled out the curd from the refrigerator. My mom and I assumed he was preparing the usual pulissery. But then, he grabbed a large onion, two tomatoes, and some coriander leaves. Mom raised an eyebrow.

"What are you making, Papa?" I asked, intrigued.

"Just wait and see," he replied, grinning like he had a master plan.

"Are you sure about this? Do you really want to experiment?" my mom asked, half-nervous and amused.

He ignored her entirely, and soon, I joined him in chopping onions and tomatoes. The father-daughter duo got to work, though I had no idea what his endgame was.

"Turn off the stove," he said as the aroma of the dish filled the kitchen.

"But what about the curd? You haven't added it yet," I pointed out.

"There's enough heat. Add it now and stir well, or it will curdle on the flame," he instructed. I followed his lead, and in minutes, the dish was ready, garnished with fresh coriander and paired with rice.

"How is it?" he asked confidently as we dug in.

"It's amazing!" I exclaimed.

"It's nice, but what is it?" my mom asked. "Where did you even get this idea?"

"Call it whatever you like. The key to good cooking is knowing your ingredients whether it's an old recipe or something new," he said, beaming.

"I'll call it thayar curry," I declared. The name stuck, and ever since, it's been our go-to comfort dish whenever we're too lazy to cook anything complicated.

What Goes Into This Dish (Ingredients)

Curd - 6 tablespoons
Onion - 1 large
Tomatoes - 2 large
Green Chillies - 5 or 6 (according to spice level)
Ginger - 1 inch
Garlic - 4 cloves
Coriander Leaves - A small handful
Turmeric powder - 1/2 tsp
Fenugreek powder - 1/4 tsp
Mustard Seeds - To temper
Oil
Salt to taste
Now for the preparation method.

Let's Get Cooking!

First things first,get those vegetables sliced starting from onion, tomatoes to green chillies along with ginger, garlic and coriander leaves. Then switch on the stove and place your saucepan to whip up some curd magic.

Pour some oil, splutter some mustard seeds until they crackle and then add the sliced ginger, garlic and saute well. Once done, add onion and green chillies. When onions turn golden, add turmeric and fenugreek powder then stir for sometime, after that add tomatoes and saute them till it is soft.

Once they are all done, switch off the stove and add blended curd into the pan and stir nicely for 10 to 15 minutes. Garnish with coriander leaves and close the lid.

Simple curd curry is ready to delight your taste buds this weekend. It goes great with rice, chapati or bread. Whatever your pick, you are sure to relish it.
