Cognac For Your Senses
Cognac is made exclusively from grapes. It comes from a particular region that is unique in the world. Cognac is a traditional wine growing region but also has a coastal strip and the ports needed to support an export trade. Its outstanding environments with its chalky, stony soil and sunny, temperate climate, produces a white wine from Ugni Blanc grapes, which is ideal for distillation.
The Cognac vineyard is divided into six crus, each with its different characteristics: the Grande and Petite champagne crus produce powerful eaux-de-vie that reveal their full finesse only after long ageing; the Borderoies crus produces fine, delicate, light eaux de vie; Cognacs from the Fins Bois crus are called Bons Bois and Bois Ordinaries. To ensure the exceptional quality of its cognacs, Hennessy uses only wines from the first four crus, selecting the areas which have the best topsoil and very chalky subsoil.

The slow and natural ageing in French oak casks develops the aromas, flavors and color of the Hennessy cognacs. Each Hennessy cognac is blended to a particular pattern, which is the secret of its composition. The master blender chooses eaux-de-vie for their complementary qualities, nuances and aromas and makes a trial blend, which after tasting, comparison and adjustment becomes the first blend. It will be sent back to the cellars to age for the appointed time before being combined with other first blends to make the final bend, which may then be fine tuned.

Their advertising was quick to explore the idea that cognac can be enjoyed in a host of different ways and places.
