Ingredients Required
To prepare this flavorful Khichdi, gather the following ingredients.
- ½ cup basmati rice,
- 1/3 cup moong dal,
- 1 tablespoon clarified butter or ghee,
- 1 teaspoon cumin seeds,
- 2 green chilies,
- 2 tablespoons freshly chopped ginger,
- 1 chopped tomato,
- ¾ teaspoon turmeric powder, and
- Salt according to taste.
For garnishing-
- Fresh coriander leaves
- Fried cashews
Preparation
- Begin by washing and soaking your moong dal and basmati rice for 30 minutes.
- In a pan, heat up the ghee and add cumin seeds. Once they start popping, add your ginger and green chilies.
- Add your chopped tomatoes, turmeric, and salt, and sauté till the tomatoes become soft and the raw smell disappears.
- Finally, add your soaked and drained rice and dal mixture.
- Continually stirring, cook this mixture for a couple of minutes.
- Add 3 cups of water and switch the heat to a medium flame.
- Let the Khichdi cook until it reaches your desired consistency, stirring occasionally to prevent it from sticking to the pan.
- Garnish with coriander leaves and fried cashews just before serving.
