How To Prepare Healthy Banana Cupcakes Recipe
Who doesn't like soft and fluffy hot banana muffins with a cup of tea or coffee during monsoons? Even though there is no fixed season to enjoy this delicious and mouthwatering muffin, having a quick and healthy recipe will be the ultimate solution for your hunger pangs!
These fluffy banana cupcakes are perfect for all occasions. All you need is Black, overripe bananas, which are ideal for this recipe. The riper the bananas are, the softer your cupcakes will be. The pro tip that you need to remember is that you have to very gently fold in the beaten egg whites for the fluffiest results!

- 0.5 cup milk
- 2 eggs separated
- 0.5 cup butter
- brown sugar (as per taste, if necessary)
- 2 cups almond flour (you can use maida alternatively )
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- pinch of salt
- 3 ripe bananas mashed

1. Preheat the oven at 375 degrees (F) and prepare cupcakes or muffin tins with pan release or paper cupcake liners
2. Beat egg whites on high until stiff peaks form, this gives the fluffiest ever cupcakes
3. Mix the butter, yolks, and milk
4. In a separate bowl, mix together flour, baking powder, baking soda and salt. Slowly add the butter mixture and mashed bananas
5 Gently fold in the beaten egg whites until fully incorporated and add powdered sugar
6. Scoop into prepared muffins or cupcake tins
7. Bake for 13-15 mins
8. Check occasionally to avoid overbaking
Bake until a knife inserted in the center comes out clean. Before decorating allow it to completely cool. For banana cream cupcakes, cut each cupcake in half and spread cream cheese frosting between them (optional)!
Store in an airtight box for 2-3 weeks
Optional Frosting:
1. Combine cream cheese and butter with a mixer on medium speed until smooth and creamy. Mix in vanilla (or lemon juice and lemon zest if using).
2. Add in salt and powdered sugar a bit at a time, scraping the sides of the bowl as needed. (Add food colour, if you like to decorate your frosting) Continue beating on medium speed until fluffy. Do not overmix. Pour in a piping tube and use as a frosting on cupcakes before serving
3. All ingredients can be measured and used as per taste
4. Store in an airtight container for 1-2week
