Method

  • Line a 4 × 8 inch loaf tin with baking paper or cling film and set aside.

  • In a blender, pulse the macadamia nuts and coconut until the mixture begins to come together. Transfer this to the melted cocoa butter and add the salt, maple syrup and vanilla.
  • Mix well, using the back of a spoon to break down any remaining lumps. Alternatively, blend everything together in a food processor until smooth.
  • Fold in the cranberries, pistachios and currants. Spoon the mixture into the prepared loaf tin, smoothing the top evenly. Garnish with extra cranberries and pistachios, if desired.
  • Refrigerate for at least 1 hour, or until set. Once firm, remove from the tin and cut into pieces.
