How to Prepare Chocolate Bonbons

Make The Filling
In a large mixing bowl, combine the confectioners' sugar, ground nuts (walnuts, pecans, or cashews), sweetened condensed milk, and softened butter. Stir until everything is well combined, forming a smooth, sticky mixture.
Shape The Bonbons
Roll the mixture into small 1-inch balls. Place the balls on a wax paper-lined baking sheet, ensuring they are spaced out. Once all the balls are shaped, place the baking sheet in the freezer for about 10-15 minutes to firm them up.
Prepare The Chocolate Coating
While the bonbon balls are chilling, prepare the chocolate coating. In a microwave-safe bowl or using a double boiler on the stovetop, melt the semisweet chocolate chips and shorten them together. Stir continuously to avoid overheating the chocolate. The mixture should become smooth and glossy.
Dip The Bonbons
Once the bonbon balls are firm, carefully dip each one into the melted chocolate mixture, ensuring it's fully coated. Return the dipped bonbons to the wax paper-lined baking sheet.
Let The Chocolate Set
Allow the chocolate-coated bonbons to cool and harden on the baking sheet. Since the balls are chilled, the chocolate will set quickly. You can place them in the refrigerator for 10-15 minutes to speed up the process.
Optional Decoration
For a festive, romantic touch, decorate your bonbons with heart-shaped sprinkles, or drizzle swirls of red or white chocolate over the top. These sweet little touches make them even more special, perfect for celebrating the love-filled atmosphere of Valentine's Week.
Storage And Tips
Storing The Bonbons: The bonbons can be stored in an airtight container in the refrigerator for up to five days. If you want to keep them for longer, you can freeze them for up to three months, making them a great make-ahead treat.
Fixing Soft Bonbons: If the bonbons are too soft for dipping, place them in the freezer for a few minutes before dipping in chocolate. This will help them hold their shape during the coating process.
Achieving The Perfect Chocolate Coating: The addition of shortening is key to achieving a glossy finish and preventing chocolate from blooming (developing a white, powdery layer). However, if stored in the fridge, some of the sheen may naturally fade.
These chocolate bonbons are not just a treat for your taste buds but also a beautiful way to express love and affection during Chocolate Day and the entire Valentine's Week. Whether you're gifting them to someone special or enjoying them as a personal indulgence, these bonbons bring a touch of sweetness to the season of love. So, roll up your sleeves, get creative with your toppings, and share the joy of handmade chocolate treats with the ones you care about most. Happy Chocolate Day!
