Rice varieties are a blessing meant for the occasions when you are hard pressed for time. They are easy to do, quick to prepare and tasty to the palate. Some of the varieties work just right with left over rice. Simplest of all, is the Pepper rice which uses minimum number of ingredients to dish out maximum taste. You do not need to buy ingredients beforehand for preparing it the next day.

The chief ingredient for this recipe is the black pepper which lends spicy earthy flavour to this dish. Black pepper is used extensively in Ayurveda and of course, in your Grandma's kit of remedies for cough and cold. This spice heals, helps digestion and piques your appetite. Serve it with the regular tomato cucumber raita to give it a complete feel of a regular meal.

Ingredients
  • · Whole Black Pepper-1 Tablespoon

    · Ghee-2 Tablespoon

    · Dry Copra -1 Cup

    · Curry Leaves-10-12

    · Chopped Onions (Optional)- ½ Cup

    · Cashew Nuts-10-12

    · Left Over Cooled Rice -2 Cups

    · Table Salt Or To Taste-1 Teaspoon

    · Citron Or Lime-2

How to Prepare
  • 1.Pour the left-over rice in a bowl. Rice should not be mushy. The grains should be slightly separate.

    2.Dry roast Whole pepper corns with urad dal and grind coarsely.

    3.Sprinkle the above powder on the rice in the bowl.

    4.Sprinkle dry copra powder over the rice mixture.

    5. Pour ghee into a wok.

    6. Add Cashew nuts and curry leaves. Onions can be added at this stage.

    7.Add this mixture to the rice.

    8.Add one tsp of table salt now to the rice and stir it carefully.

    9. Extract the juice of two citrons (Heralekai in Kannada), in to the rice, cover it with a lid and keep aside.
