How One Grocery Find Made An Office Lunch Quick, Easy, And Delicious
When I got my first job, I was elated, a mix of pride and excitement as I started my journey to financial freedom. It felt like the beginning of something big, a step into adulthood with responsibilities and the promise of independence. But as thrilling as it was, the first few days were a whirlwind.
Mornings became a frantic race against the clock, trying to juggle breakfast, getting ready, and preparing lunch for the day. With my mom also going to the office, I didn't want to burden her with my new routine, so I knew I had to manage everything on my own.
One weekend, during a grocery run, I found myself wandering the aisles, looking for something quick and easy to make for lunch. My eyes landed on a can of tuna sitting on a nearby shelf. I had never tried canned tuna before, but something about it intrigued me. I picked it up, thinking it could be the answer to my rushed mornings. I had heard of tuna sandwiches but never made one myself, so I decided it was time to try.
The next morning, after a quick breakfast, I pulled out the can of tuna, mixed it with sliced onions and a generous spoonful of mayonnaise. I spread the mixture on some bread, making a few sandwiches for lunch. It was simple, yet I was hopeful it would be satisfying.
When lunchtime came around, I took my first bite and was pleasantly surprised. The taste was reminiscent of a chicken sandwich, savory and flavorful, but with its own unique twist. Plus, it had taken only minutes to prepare, which was a huge relief.
Over the next few days, the tuna sandwich became my go-to lunch. It was quick, tasty, and kept me full through the busy afternoons at work. Noticing my new lunch habit, one of my close friends mentioned a recipe she thought I'd love. She described them as crispy on the outside, tender on the inside, and absolutely delicious which, I decided to give it a try.
Here's the recipe that quickly became one of my favorites.
Tuna Croquettes
Get Hold Of The Following

leaves

chopped

potatoes
boiled
and
mashed
1/2
lime
Salt
as
per
taste

egg
beaten
to
coat
Breadcrumbs
to
crumb
coat
Get, Set, Prepare!
In a pan , sauté onions until pink and add ginger garlic paste and saute till raw smell goes.
Add the spices and curry leaves and green chillies and roast for a minute or two. Add the tuna and let it roast for 5-8 minutes till the mixture begins to look dry. Add curry leaves, salt and mix it with the mashed potatoes and fresh coriander leaves and lime. Take a small handful and shape it into oblong shapes and dip it in the beaten egg first and then dip it in bread crumbs .
When oil is hot and ready to deep fry, dip it in and fry till it comes out golden brown. Hot and crispy tuna croquettes are ready to serve. Eat them with a dip of your choice, tomato sauce is highly recommended.
