Amit sat on the couch, watching his wife, Neha, rush around the house like a whirlwind. Every morning was the same-she would wake up early, cook breakfast, pack their lunch, and then get ready for work. She hardly had a moment to sit down before rushing out the door. And after a long day at the office, she would come home and immediately start with the household chores. He could see the exhaustion in her eyes, the way her shoulders sagged when she thought no one was watching. Yet, she never complained. She kept pushing forward, managing both work and home with a smile. But Amit knew she was tired.
One morning, as she left for work, he decided to take a half day from the office and do something special for her. He wasn't much of a cook, but today, he was determined. The kitchen turned into a battlefield with flour, utensils, and splashes of batter everywhere, but Amit was too focused on his mission to worry about the mess. He set the dining table with care, placing each dish with pride. He even lit a small candle in the center-because why not? She deserved it.
As the clock struck eight, Amit heard the jingle of keys at the door. Neha stepped in, looking utterly drained. She kicked off her heels and sighed, rubbing her temples. Then she caught the aroma wafting from the kitchen. Confused, she looked up to see Amit standing there, grinning like a proud chef.
"Surprise!" he announced, gesturing toward the table.

Neha's eyes widened as she took in the sight-three varieties of vadas, all beautifully presented: Dahi Vada, Sambar Vada, and Rasa Vada. Tears pricked at the corners of her eyes as she looked at her husband, who was still wearing a flour-stained apron and had traces of yogurt on his cheek. But then, her eyes drifted to the disaster that was their kitchen.
"Amit..." she began, raising an eyebrow at the mess.
He quickly raised his hands in defense. "If I made it, I'll clean it too. I promise."
A small smile tugged at her lips as she shook her head. "You better."
She sat down, taking the first bite of the Dahi Vada. The flavors melted in her mouth, and she let out a contented sigh. "This is perfect," she murmured.
Amit beamed. "Good, because I might have set off the smoke alarm twice while making it."
Neha laughed, the exhaustion momentarily forgotten. She reached for his hand across the table and squeezed it. "This means the world to me."
The Vadas That Made Her Day
How To Make The Vadas
Ingredients
- 1 cup urad dal (split black gram), soaked for 4-6 hours
- 1 tsp ginger, grated
- 1-2 green chilies, finely chopped (optional)
- Salt to taste
- Oil for deep frying
Method
Prepare the Batter : Drain the soaked urad dal and grind it into a smooth, thick batter using minimal water.
Combine Together : Add grated ginger, chopped green chilies, and salt. Mix well and whip the batter to aerate it for fluffiness.
Shape the Vadas : Wet your hands, take small portions of batter, shape them into balls, flatten slightly and make a hole in the center for a doughnut shape.
Fry the Vadas : Heat oil in a deep pan. Fry the vadas on medium heat until golden brown and crisp. Drain on paper towels.
Dahi Vada
A soft, fluffy vada soaked in creamy yogurt (dahi) and garnished with a blend of spices and chutneys. It's a perfect balance of sweet, tangy, and spicy flavors, making every bite a delight.
Additional Ingredients
For Soaking
- 2 cups warm water
- Pinch of salt
- For Yogurt Mixture:
- 2 cups thick yogurt (curd), whisked
- 1 tsp sugar (optional)
- Salt to taste
For Garnish
- 1 tsp roasted cumin powder
- 1 tsp red chili powder
- 2 tbsp tamarind chutney
- 2 tbsp green chutney (coriander-mint)
- Chopped coriander leaves
How To Prepare
- Soak the fried vadas in warm, salted water for 10-15 minutes until soft. Gently squeeze out excess water and set aside.
- Whisk yogurt with sugar and salt until smooth.
- Place soaked vadas in a serving dish and pour the yogurt over them generously.
- Drizzle tamarind and green chutneys, sprinkle cumin and red chili powder, and garnish with coriander leaves.
Rasa Vada
A crispy vada immersed in hot, flavorful rasam-a spicy, tangy South Indian broth. The vada absorbs the aromatic essence of the rasam, offering warmth and comfort in every spoonful.
Additional Ingredients For Rasam
- 1 tbsp tamarind paste
- 1 tomato, chopped
- 1 tsp toor dal, cooked
- 1 tsp rasam powder
- 1/2 tsp turmeric powder
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2 dried red chilies
- 1 sprig curry leaves
- 2 cups water
- Salt to taste
- 1 tbsp oil or ghee
- Chopped coriander leaves for garnish
How To Prepare
- Prepare rasam by heating oil, adding mustard and cumin seeds, red chilies, and curry leaves. Let them splutter.
- Add tomato, rasam powder, turmeric, tamarind water, and cooked toor dal. Simmer for 10 minutes.
- Place warm vadas in a bowl and pour hot rasam over them. Let them soak before serving.
Sambar Vada
A deep-fried vada dunked in a rich, hearty sambar-a lentil-based stew with a medley of vegetables and spices.
Additional Ingredients For Sambar
- 1/2 cup toor dal, cooked
- 1 tbsp tamarind paste
- 1 small onion, chopped
- 1 tomato, chopped
- 1 carrot, diced (or other veggies like drumstick, beans)
- 1 tsp sambar powder
- 1/2 tsp turmeric powder
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 2 dried red chilies
- 1 sprig curry leaves
- 2 cups water
- Salt to taste
- 1 tbsp oil
- Chopped coriander leaves
How To Prepare
- Prepare sambar by sautéing mustard, cumin seeds, red chilies, and curry leaves in oil.
- Add onion, tomato, turmeric, and sambar powder. Cook until soft.
- Add tamarind water, cooked dal, and vegetables. Simmer until tender.
- Place warm vadas in a bowl and pour hot sambar over them.
- Dahi vada, Rasa vada and sambar vada are ready to be served hot!
Love isn't always about grand gestures. It's in the small, thoughtful acts-like making vadas on a tiring day, just to see the person you love smile. Because sometimes, the simplest dishes hold the deepest emotions. Food has the power to bring people together, but when made with love, it becomes something even more special. Sometimes, the best way to say 'I love you' is through a plate of one's favorite food. And that night, Amit did just that.
