We Love Indulging In Biriyani, Here Are Five Popular Variations That You Can Try And Spoil Your Taste Buds
Biryani is a popular Indian rice dish known for its rich flavours and aromatic spices. It is a complete meal in itself, combining meat or vegetables with fragrant long-grain rice. Biryani has various regional variations, each with its own unique taste and cooking style.
India is renowned for its extensive and varied culinary traditions and Biriyani is one of them. There are around 26 different varieties of this mouth-watering dish in this country with variations found in almost every area. Talking about its precise origin, it is still unknown but it is believed that this popular dish was brought to India by the Mughals and Arab traders.
Today, there is countless Biriyani variation that exists in each state of this country and each comes with its unique history, aroma, flavour profile, and distinct style of cooking. Hyderabadi Biryani, Lucknowi Biryani, Thalassery Biryani, Ambur Biryani, and Beary Biryani are a few of them that are well-known and easily available in India.

1. Hyderabadi Biryani
Hyderabadi biryani is one of the most famous types of biryanis in India. It originated in the city of Hyderabad and is characterized by its spicy flavour and the use of basmati rice. The meat, usually chicken or mutton, is marinated in yoghurt and cooked along with layers of partially cooked rice.
2. Lucknowi Biryani (Awadhi Biryani)
Lucknowi biryani, also known as Awadhi biryani, hails from Lucknow in Uttar Pradesh. It is a slow-cooked biryani that uses whole spices like cinnamon, cardamom, and cloves to enhance the flavours. The meat used can be either chicken or mutton, and it is layered with partially cooked rice infused with saffron.
3. Kolkata Biryani (Calcutta Biryani)
Kolkata biryani, commonly known as Calcutta biryani, has a distinct taste and preparation method. It is influenced by the Mughlai style of cooking and is lighter compared to other biryanis. Kolkata biryani uses fragrant rice like Gobindobhog or Kalijeera, along with potatoes and tender meat, usually chicken.
4. Malabar Biryani
Malabar biryani originates from the Malabar region in Kerala. It is known for its unique blend of flavours influenced by Arab and Malabari cuisines. The key ingredients include kaima or Jeerakasala rice, spices like fennel seeds and star anise, coconut milk, and fried onions. It can be made with chicken, mutton, or fish.
5. Sindhi Biryani
Sindhi biryani comes from the Sindhi community in Pakistan but has gained popularity in India as well. It is a spicy and flavorful biryani that combines meat (usually beef) with basmati rice cooked separately before being layered together. The distinguishing feature of Sindhi biryani is the use of dried plums (aloo bukhara) for added tanginess.
