1. Breakfast Delight: Masala Omelette
Ingredients

How To Prepare

oil

a
non-stick
pan
over
medium
heat.
Pour
the
egg
mixture

pan

spread
it

omelette

2-3
minutes,
or
until
the
bottom
is
set.
Flip

omelette

cook

1-2
minutes,

fully

2. Lunchtime Favorite: Chole Bhature
Ingredients

soaked
overnight

ginger-garlic
paste

teaspoon
cumin
seeds

teaspoon
coriander
powder

turmeric

masala

bhature
(fried
bread):

cups
all-purpose
flour

yogurt

How To Prepare
1.
For
the
chole:
Drain
the
soaked
chickpeas
and
rinse
under
cold
water.
In
a
pressure
cooker,
heat
oil
and
add
cumin
seeds.
Add
the
chopped
onions
and
sauté
until
golden
brown.
2.
Add
the
ginger-garlic
paste
and
sauté
for
another
minute.
Add
the
tomato
puree
and
spices
(coriander
powder,
turmeric
powder,
red
chili
powder,
garam
masala,
salt)
and
cook
until
the
oil
separates.
3.
Add
the
drained
chickpeas
and
enough
water
to
cover
them.
Pressure
cook
for
about
4-5
whistles,
or
until
the
chickpeas
are
cooked
through
and
soft.
4.
For
the
bhature:
In
a
bowl,
mix
the
flour,
yogurt,
sugar,
baking
powder,
and
salt.
Add
enough
water
to
make
a
smooth
dough.
Cover
and
let
it
rest
for
2
hours.
5.
Divide
the
dough
into
small
balls
and
roll
them
out
into
discs.
Heat
oil
in
a
deep
pan
and
fry
the
bhaturas
until
they
are
golden
brown
and
puffed
up.
6.
Serve
the
chole
and
bhature
hot,
garnished
with
fresh
coriander
leaves.
3. Tea-Time Treat: Samosas
Ingredients

dough:

all-purpose
flour

oil

mashed

How To Prepare
1.
For
the
dough:
In
a
bowl,
mix
the
flour,
oil,
and
salt.
Add
water
as
needed
to
make
a
stiff
dough.
Cover
and
let
it
rest
for
30
minutes.
2.
For
the
filling:
Heat
oil
in
a
pan
and
add
cumin
seeds.
Add
the
chopped
onions
and
sauté
until
golden
brown.
Add
the
green
chili,
ginger-garlic
paste,
and
spices
(coriander
powder,
turmeric
powder,
red
chili
powder,
garam
masala,
salt)
and
cook
for
another
minute.
3.
Add
the
boiled
and
mashed
potatoes
and
peas.
Mix
well
and
cook
for
2-3
minutes.
Remove
from
heat
and
let
it
cool.
4.
Divide
the
dough
into
small
balls
and
roll
them
out
into
discs.
Cut
each
disc
in
half
to
form
semi-circles.
Fold
each
semi-circle
into
a
cone
shape
and
fill
it
with
the
potato-pea
mixture.
Seal
the
edges.
5.
Heat
oil
in
a
deep
pan
and
fry
the
samosas
until
they
are
golden
brown
and
crispy.
6.
Serve
the
samosas
hot,
garnished
with
fresh
coriander
leaves
and
accompanied
by
tamarind
chutney
or
mint
chutney.
4. Dinner Delight: Paneer Butter Masala
Ingredients

paneer,
cut
into
cubes

butter

How To Prepare

butter
in

pan

cumin
seeds.

the

another
minute.

tomato

Ingredients

milk
powder

flour

teaspoon
baking
soda

tablespoons
ghee,
melted

Milk,
as
needed

Oil
for
frying
-
For
the
sugar
syrup:

1
cup
sugar
-
1
cup
water
-
1/2
teaspoon
cardamom
powder
-
Saffron
strands
(optional)
What To Prepare
1.
In
a
bowl,
mix
the
milk
powder,
all-purpose
flour,
and
baking
soda.
Add
the
melted
ghee
and
mix
well.
2.
Gradually
add
milk,
a
little
at
a
time,
and
knead
into
a
soft
dough.
Cover
and
let
it
rest
for
10
minutes.
3.
Meanwhile,
prepare
the
sugar
syrup:
In
a
pan,
combine
the
sugar
and
water.
Bring
to
a
boil
and
simmer
for
5-7
minutes,
or
until
slightly
thickened.
Add
the
cardamom
powder
and
saffron
strands,
if
using.
Keep
warm.
4.
Divide
the
dough
into
small
balls
and
roll
them
between
your
palms
to
make
smooth
balls.
5.
Heat
oil
in
a
deep
pan
and
fry
the
dough
balls
over
low
heat
until
golden
brown
and
cooked
through.
Drain
on
paper
towels.
6.
Soak
the
fried
dough
balls
in
the
warm
sugar
syrup
for
at
least
30
minutes
before
serving.
7.
Serve
the
gulab
jamuns
warm,
garnished
with
chopped
nuts

desired.
