Here are some easy to grow vegetables that can be grown in your kitchen garden without interrupting your daily work schedules.

1. Spinach: This green leafy vegetable grows very quickly in your garden and needs very little tending to.

  • You can grow this rich source of vitamins and iron in a vegetable patch or in containers.
  • When You are sowing the seeds sow them shallow in the ground. They will take about 2 to 3 weeks to sprout.
  • Until the seeds sprout you need to water it very well but don't do so to the saplings as they way wilt.
  • Cool temperatures and some dampness in the air suits spinach every well.
  • After harvesting spinach wash it very well in hot water because it holds on to the soil firmly even after being plucked.

2. Lettuce: A cousin leafy green again can be chosen to grow your own vegetables.

  • Lettuce like spinach need lower temperatures and lot of moisture
  • They can also be cultivated like a potted plant.
  • If your lettuce gets too much sun then it will develop a bitter under taste.
  • Lettuce grows best in sandy soil that has ample amount of organic matter. Throw in your vegetable skins and other useful waste into the soil in which you cultivate them.
  • Harvest the lettuce young for your green salads so make sure the soil has enough nutrients to nurture it quickly or else they will be stunted and weak.

3. Eggplant or Brinjal: Eggplant the purple color vegetable also called brinjal in India is the ingredient for many interesting recipes.

  • Eggplants love warm weather. Too much cool temperatures in the night will hamper their growth.
  • This plant has an annual life cycle especially in India where the temperature most often does not fall under the freezing level.
  • You can easily plant them in pots from seeds you will find inside the fruit because they don't grow very tall; they are shrubs.
  • Eggplants need plenty of sunshine but shield them against strong winds because the fruit is large and delicately attached to the plant.

4. String Beans: Also know as green beans are easy vegetables to grow on your own.

  • You can grow them from the edible pods inside the green covering but don't soak them in water prior to sowing.
  • Give them full sunshine for best results but protect against rainfall as as the roots are shallow.
  • They grow well in well drained soil and are ideal for container gardening.
