Collards are often referred to as 'open cabbages'. This is because they more or less resemble cabbages but their leaves are not curled in like a cabbage. Collards are predominantly green leafy vegetables but they can be found in other colours like blue, purple etc. This healthy vegetable is best known for having plenty of photo chemical that protects against cancer. It is also a great source of vitamin B complex.
