For the dressing

- 1 tablespoon lime juice
- ½ teaspoon lime zest
- ½ teaspoon salt (or to taste)
- ¼ teaspoon freshly ground black pepper
- ¼ cup chopped mint leaves

Directions
- In a small bowl, combine the extra virgin olive oil, lime juice, lime zest, salt, freshly ground black pepper, and mint leaves.
- To a large bowl, add the watermelon cubes.
- Add the dressing to the watermelon and toss well.
- On a serving plate, arrange the salad and top it with crumbled feta cheese.
- Serve immediately.
