2. Vegetable poha: Poha is a popular Indian breakfast dish that can be prepared in a jiffy. Heat some oil in a pan, add mustard seeds, curry leaves, chopped onions, and green chillies. Then, add flattened rice (poha), turmeric powder, salt, and sauté for a few minutes. Finally, garnish with coriander leaves and a squeeze of lemon juice.
3. Egg and veggie wrap: For a protein-packed breakfast, whip up an egg and veggie wrap. Beat an egg with a pinch of salt and pepper. Heat a pan with a little oil and pour the beaten egg mixture. Place some chopped vegetables like bell peppers, onions, and spinach on top. Cook until the egg sets, then flip and cook for a minute. Place the cooked egg on a whole wheat tortilla and roll it up. You can also add toppings like sliced tomatoes, feta cheese, or a poached egg for extra flavour and protein. Avocado toast is not only trendy but also a nutritious breakfast option.
