Eggplant Salad Recipe (Indian Yogurt Raita) – Summer Salad

Ingredients:

1. 1 cup fresh yogurt

2. 2-3 eggplant

3. 1 dried red chilli

4. 1/2 tsp mustard seeds

5. 1/2 tsp urad dal

6. 1/2 gram dal

7. Oil for frying

8. Salt as per taste

9. 4-5 fresh curry leaves


Eggplant Salad Preparation:

1. In a pan fry mustard seeds until the seeds crackle and add urad dal, gram dal, red chillies, curry leaves and fry for a minute.
2. Roast the raw eggplant without any oil on flame. After the vegetable turns black, peel out the black portion and mash well.
3. In a bowl add the mashed eggplant, salt and the fried mixture, mix well. Tasty eggplant salad is ready to serve.
