Easy Roasted Vegetables Recipe

Ingredients:

1.1 small eggplant (cubed)

2.2 red bell peppers (seeded and diced)

3.1 sweet potato, peeled and cubed

4.3 carrots (cubed)

5.1 onion (quartered)

6.1 tsp chopped fresh thyme

7.2 tsps chopped fresh asparagus

8.1 tsp olive oil (Use cooking spray instead of extra oil)

9.2 tsps balsamic vinegar

10.Salt and freshly ground black pepper


Easy Roasted Vegetables Preparation :

1.Preheat oven to 450 degrees F.

2.In a large bowl, Combine all the above vegetables and season with thyme, asparagus, salt and pepper and dice the vegetables.

3.Sprinkle cooking spray and add only a teaspoon of olive oil (you can replace olive oil with canola).

4.Roast upto 45 minutes or until light brown in the preheated oven. Delicious vegetarian diet recipe ready to serve. (You can even steam the vegetables with the same ingredients).
