Paneer happens to be the staple food of most vegetarians. Almost everyone is fond of paneer and people make it a point to include at least one paneer delicacy in the menu during the parties.

Today we have a delicious paneer preparation for you. This paneer recipe is made along with a medley of vegetables like carrots, beans, cauliflower and potatoes. This recipe is known as the paneer navratan korma which basically means nine gems curry.

The nine gems are actually nine items or vegetables using which this curry is prepared. The nine items are cooked in a thick cashew nut gravy which is a sheer treat to your taste-buds.

Ingredients

  • Cauliflower- 1 (small, florets detached)
  • Capsicum- 1 (medium, chopped)
  • French beans- 8-10 (chopped)
  • Carrots- 2 (chopped)
  • Green peas- ½ cup
  • Potatoes- 2 (medium, chopped)
  • Corn- ½ cup
  • Paneer- 250gms (thinly sliced)
  • Mushrooms- 8-10 (chopped)
  • Cashew nuts- ½ cup
  • Onion paste- 2tbsp
  • Ginger- 1 medium sized piece (grated)
  • Garlic paste- 1tbsp
  • Yogurt- ½ cup
  • Black pepper powder- 1tsp
  • Garam masala powder- 1tsp
  • Cinnamon stick- 1
  • Green cardamoms- 4
  • Cloves- 5
  • Salt- as per taste
  • Oil- 2tbsp
  • Water- 3 ½ cup
  • Fresh cream- 1tbsp (for garnish)

Procedure

1. Soak the cashewnuts in warm water for about 10 minutes.
2. After that grind it into a thick paste in a mixer and keep it aside.
3. Boil all the vegetables and corn in 3 cups of water for about 10 minutes on medium heat.
4. Once done, drain the hot water and pour some cold water on the boiled vegetables.
5. Drain the water from the vegetables and keep it aside.
6. Heat oil in a pan and add cinnamon, cloves and cardamom to it. Fry for a minute.
7. Add the onion paste to the pan and cook for 4-5 minutes on medium flame.
8. Then add ginger, garlic paste, black pepper powder, yogurt and mix well.
9. Keep stirring so that no lumps are formed in the yogurt.
10. Add cashewnut paste and fry for 2-3 minutes
11. Now add the boiled vegetables, mushrooms, salt and cook for 3-4 minutes.
12. Add half a cup of water and stir well.
13. Now finally add the paneer pieces, garam masala powder, cover and cook for 4-5 minutes on low flame.
14. Once done, switch off the flame and garnish with fresh cream.
