Pressure Cooked Vegetable Curry Recipe
We all are advised to include vegetables in our diet. However, we do not like to have green vegetables every day. This is where your cooking techniques and creativity comes to place. You can prepare delicious and lip smacking recipes using vegetables.
To absorb the nutrients and vitamins of the vegetables, steaming and boiling are the best cooking methods. If you want to prepare a nutritious and tasty vegetable side dish, here is a pressure cooked vegetable curry recipe. Ingredients
- Potatoes- 2 (washed, peeled and cut into medium sized pieces)
- Onions- 2-3 (chopped)
- Green beans- 4-5 (chopped)
- Tomato- 1 (chopped)
- Spinach- 50gms (chopped)
- Green peas- 2tbsp
- Green chillies- 2 (chopped)
- Ginger- 1 inch (cxhopped)
- Garlic- 3-4 pods (minced)
- Turmeric powder- 1tsp
- Red chilli powder- 1½ tsp
- Coriander powder- 2tsp
- Garam masala- ½tsp
- Cumin and mustard seeds- ½tsp
- Lemon juice- ½tsp
- Coriander leaves- 2tbsp (chopped)
- Salt- as per taste
- Oil- 2tbsp
- Water- 1 ½ cups
Procedure
- Heat oil in a pressure cooker on a medium flame. Season with cumin and mustard seeds.
- When the seeds start to splutter, add the chopped onions and saute on a medium flame for a minute. Now add potato pieces and mix well.
- Add turmeric powder, salt, ginger, garlic and green chillies into the cooker. Saute for few seconds and then add beans, spinach, green peas and tomatoes. Cook for another minute on a medium flame.
- Sprinkle coriander powder, red chilli powder and mix. Now pour water and close the cooker lid. Pressure cook for a duration of 2 whistles.
- Open the lid after 10 minutes. Add garam masala, lemon juice and coriander leaves. Mix well.
Pressure cooked vegetable curry is ready to eat. Serve this Indian side dish hot with rotis.
