Paneer with Carrot and Tomato Gravy

INGREDIENTS :

300 gms Paneer (Cottage Cheese) cut into triangles
3 tbsp Oil
3 Carrots boiled and pureed with water
3 Tomatoes, pureed
Salt to taste
1 tsp Ginger Paste
2 tsp Chili powder
A pinch of Hing (Asafoetida)
1 tsp Rye (Mustard seeds)
"' tsp Garam Masala powder
"' Cup Coconut milk
2 tbsp Coriander leaves

METHOD :

Heat oil, add Hing and Rye when they splutter add curry leaves and add ginger paste and fry for a minute. Now add Chili powder. Add Tomato Puree and cook till it reduces. Now add carrot puree and mix well. Cook for 2 minutes. Add salt and cook on high flame. After sometime add Paneer pieces. Cook for 2 minutes and then add Garam Masala powder. Add Coconut Milk and mix well. Now add Coriander leaves and mix well.

Remove to a serving bowl and serve hot with Ghee Rice or Roti.
