Palak And Mushroom Makhani
Both palak and mushrooms are favourite of those who likes a continental touch in their foods these days. So, it is good to have an Indian recipe that makes use of both palak and mushrooms. This dish is actually a spinach based curry and is called Palak and mushroom makhani.
As the name suggests, this spinach curry is rich and creamy. The gravy is thickened with fresh cream and the spinach curry is cooked with unsalted butter. But for the sake of reducing the calorie count, you can use low fat oil or butter. This is an Indian recipe but does not have too many spices. The main spice used in it is garam masala.

This recipe is very healthy as the main ingredients are spinach and mushrooms. Palak and mushroom makhani greatly resembles palak paneer in its constitution. All you are doing is replacing cottage cheese with mushrooms.

Ingredients
- Spinach or palak- 200 grams
- Mushrooms- 20 (diced)
- Onion- 1 (chopped)
- Garlic pods- 5 (minced)
- Tomato puree- 2tbsp
- Cumin seeds- ½ tsp
- Green chillies- 2 (slit)
- Pepper powder- 1tbsp
- Garam masala- 1tsp
- Fresh cream- 2tbsp (whipped)
- Butter (unsalted)- 1tbsp
Procedure
- Boil the spinach in a bowl of water for about 5 minutes. Drain away the water and place the boiled spinach under cold water to let off steam.
- Then grind the boiled palak into a puree and keep it aside.
- Melt butter in a pan and season it with cumin seeds, green chillies and half the pepper.
- Add onions to the pan. Saute them on a low flame for 3-4 minutes. Then add garlic and cook for another 2 minutes.
- Put in the mushrooms next and cook for about 2-3 minutes.
- When the mushrooms start giving out juice, add the tomato puree and the rest of the pepper & salt to taste.
- Cook for 2-3 minutes and then pour the spinach puree into the pan. Add garam masala and stir to mix it well.
- Cover and cook for 5-7 minutes on a low flame.
- Just a few minutes before you remove the curry from the flame, add whipped cream to it.
- Mix it up and cook for 3-4 minutes on a low flame.
You can garnish the palak mushroom makhani with grated cottage cheese and enjoy it with hot roties.
