Gingered Potatoes
Ingredients:
750gms
Potatoes,
Cubed
2tbsp
Oil
2" piece
Fresh
Ginger,
Grated
3
Green
Chilies,
Chopped
3tbsp
Cashews
Few
strands
of
Saffron
3tbsp
Boiling
water
3tbsp
Butter
Celery
leaves,
to
garnish
Method:
Cook
the
Potatoes
in
a
saucepan
of
boiling
water
for
10
minutes.
Drain
thoroughly.
Heat
the
Oil
in
a
heavy
based
skillet
and
add
the
Potatoes.
Cook
for
3-4
minutes,
stirring
constantly.
Add the grated Ginger, Chili, Celery and Cashews and cook for 1 minute. Meanwhile, place the Saffron strands in a small bowl. Add boiling water and leave to soak.
Add the Butter to the pan and stir in the Saffron mixture. Cook gently, for 10 minutes or until the Potatoes are tender.
Remove
to
a
serving
bowl
and
garnish
with
the
Celery
leaves
and
serve
at
once.
