Aloo Palak: Desi Recipe

It is the season of new potatoes. They are sweet, easy to cook and inexpensive too. Moreover, if you check from a health perspective, new potatoes offer many health benefits.

In Indian cuisine, aloo (potatoes) are widely used to prepare starters, snacks, side dishes and main course meals. They can be used as a main ingredient to prepare sabzis or snacks. You can also mix it with other vegetables like spinach, green beans, beans or paneer to prepare exotic dishes.

Aloo palak (potatoes with spinach) is a popular and healthy side dish in the Indian cuisine. You can prepare it with green leafy vegetables like spinach and get the required nutritional supplement of the day. The recipe is healthy and nutritious as potatoes and spinach are pressure cooked and not fried. You can also add other ingredients like tomatoes and green chillies. Aloo Palak: Desi Recipe

Pressure cooked aloo palak recipe:

Serves: 3
Preparation time: 10 minutes
Cooking time: 10 minutes

Ingredients

  • Potatoes- 3 (cut into medium-sized pieces)
  • Spinach- 250 gms (roots removed and chopped finely)
  • Green chillies- 3 (chopped)
  • Garlic- 4-5 (chopped)
  • Tomato- 1 (chopped)
  • Turmeric powder- 1tsp
  • Red chilli powder- 2tsp
  • Coriander powder- 2tsp
  • Amchur powder- ½ tsp
  • Cumin and mustard seeds- 1tsp
  • Bay leaf- 1
  • Salt- as per taste
  • Oil- 2tbsp
  • Water- 1/3 cup

Procedure

  • Wash the spinach leaves in water till the dirt is completely removed.
  • Heat oil in a pressure cooker. Season with cumin and mustard seeds and bay leaf.
  • When the seeds start to splutter, add the potato pieces and mix well. Cook for 2 minutes and then add the chopped spinach leaves.
  • Add garlic and green chillies and cook on a high flame for a minute more.
  • Now sprinkle salt and turmeric powder. Lower the flame to medium and cook for another 2 minutes.
  • Now add the tomatoes and mix well. Cook for a minute and then add red chilli powder, coriander powder and mix all the ingredients.
  • Cook for another minute and then slowly pour water. Do not pour much water otherwise it will become a thin gravy.
  • Close the pressure cooker lid and let it cook for the duration of 2 whistles.
  • Open the lid once when it is cooled and then add amchur powder. Mix well.

Aloo palak is ready to eat. Serve it hot with rotis or as a side dish with rice and dal.
