Carrot Rice Recipe For Lunch

Carrot rice is a delicious lunch recipe that you can prepare very easily. This easy carrot recipe is filling and tastes delicious. Ingredients
- Rice- 2 cups (boiled)
- Carrots- 4-5 (cut in julienne shape)
- Onions- 2 (sliced)
- Capsicum- 1 (chopped)
- Green chillies- 3-4 (slit)
- Garlic- 3 (minced or crushed)
- Ginger- ½ inch (chopped finely)
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Pulao masala- ½ tsp
- Black pepper- ½ tsp (grounded)
- Cumin seeds- ½ tsp
- Salt- as per taste
- Oil- 2tbsp
- Coriander leaves- 1tbsp (chopped)
Procedure
- Heat oil in a deep bottomed frying pan. When it starts steaming, season with cumin seeds.
- Add onion and saute for a minute on a medium flame. Now add ginger, garlic, carrot and capsicum. Sprinkle salt and turmeric powder.
- Mix well and saute on a low flame for 4-5 minutes till the vegetables become a little tender.
- Now add the masalas namely, black pepper, red chilli powder, pulao masala. Also add the slit green chillies. Mix well.
- Slowly add the boiled rice and mix well so that the masala is spread evenly with the rice. Cook on a medium flame for a minute more.
Carrot rice recipe is ready to eat. Garnish with chopped coriander leaves and serve it hot with raita or salad.
