Sindhi Sai Bhaji Recipe For Navratri
Sai bhaji is a special Sindhi vegetarian recipe prepared without onions and garlic. This simple, delicious and nutritious dish is perfect for the upcoming festival of Navratri. The dish is prepared using three types of green leaves along with a mix of vegetables and pulses. These ingredients make this dish a nutritious delight for your body on a fasting day.
Sindhi sai bhaji is prepared with spinach, dill and fenugreek leaves. The mix of the three kinds of leaves give a unique taste to the recipe. The dill leaves add a dash of tangy flavour to the dish. The absence of onions and garlic does not create much of a difference. The taste of vegetables with chana dal and leafy greens makes this vegetarian recipe an absolute delight.

Ingredients
- Spinach leaves- 3 bunches
- Fenugreek leaves- ½ bunch
- Dill leaves- ¼ bunch
- Chana dal (Bengal gram)- ½ cup
- Potatoes- 3 (cut into small cubes)
- Brinjal- 1 (medium sized, cut into small cubes)
- Tomatoes- 2 (medium sized, cut into small cubes)
- Oil- 1tbsp
- Cumin seeds- 1tsp
- Green chillies- 2 (chopped)
- Ginger- 1 piece (grated)
- Coriander powder- 2tsp
- Red chilli powder- 1tsp
- Turmeric powder- ½ tsp
- Salt- as per taste
- Water- 2 cups
Procedure
- Clean all the leaves properly with water, chop them and keep them aside.
- Heat oil in a pressure cooker and add cumin seeds. Fry for a minute.
- Add ginger, green chillies and fry on medium heat for another minute.
- Then add the potatoes, brinjal and tomatoes to it. Fry for 3-4 minutes.
- Sprinkle coriander powder, red chilli powder, turmeric powder and mix well.
- Now add all the chopped leaves and cook for 3-4 minutes.
- Add salt and mix well. Cook for 5 minutes on medium flame.
- Mix in the chana dal and water.
- Cover the pressure cooker with the lid and cook on low flame.
- Wait for two whistles to blow.
- Switch off the flame and wait for the steam to come out completely.
- When the pressure reduces, open the lid and mash the whole thing with a churner.
- Transfer it to a serving bowl and serve hot.
Sindhi sai bhaji is ready to be served. Enjoy this exotic vegetarian dish with steamed rice.
