Malabar Spinach Dal Recipe For Anemics
Spinach is an excellent food for those who are suffering from iron deficiency or anemia. This wonder leaf is a rich source of iron, vitamins, fibre, calcium and is loaded with flavanoids which act as antioxidants. Apart from all of these, spinach tastes awesome and we have an excellent recipe which will practically make you fall in love with this veggie.
Malabar spinach dal is a high protein and iron rich recipe which is just perfect for anemics. The healthy and tasty combination of dal with the juicy spinach makes this recipe simply irresistible. The aroma of the fresh curry leaves and mustard lend this recipe a mouthwatering flavour which makes it even more tempting. The best part of the recipe is that it is quick and easy.

Ingredients
- Toor dal (pigeon pea)- 1 cup
- Spinach leaves- 2 cups (chopped)
- Onion- 1 (chopped)
- Green chillies- 3 (slit)
- Ginger- ½ tsp
- Turmeric powder- 1tsp
- Salt- as per taste
- Tamarind pulp- 1tbsp
- Water- 2 cups
For seasoning
- Mustard seeds- ½ tsp
- Cumin seeds- 1tsp
- Urad dal- 1tsp
- Garlic- 3-4 cloves (crushed)
- Dry red chillies- 2 (broken)
- Curry leaves- 10-12
- Oil- 2tbsp
Procedure
- Wash the spinach leaves thoroughly before chopping.
- In a pressure cooker take toor dal, spinach, ginger, onion, green chillies, turmeric powder and water.
- Close the lid and cook on medium heat. Allow 3 whistles to blow.
- Once done, remove the cooker from the flame and keep it aside to cool down completely.
- Heat oil in a deep bottomed pan, add mustard seeds and cumin seeds. Allow them to crackle.
- Add curry leaves, dry red chillies, urad dal, garlic one by one.
- Cook for 2 minutes on medium flame.
- Now add the cooked spinach dal to it and mix well.
- Add the tamarind paste and mix well. Cook for about 6-7 minutes on medium flame.
- Once done, switch off the flame and serve.
Serve Malabar spinach dal with steamed rice or rotis.
