Easy Avial Recipe: Delicacy Of Kerala
Avial or aviyal, a traditional Kerala recipe, is served mainly during Onam Festival. However, the interesting thing about this easy avial recipe is that it can be prepared using any vegetables. So, if you have any many vegetables left, prepare this healthy curry that goes well with rice or rotis.
Here is the easy avial recipe for your weekend curry.
Kerala Aviyal Recipe:
Ingredients:
Vegetables
(Yam,
drumsticks,
beans,
carrot,
raw
plantain,
cucumber,
potaotoes,
gourds,
brinjal)
–
all
cut
into
1
inch
length.
Salt
for
taste
Masala For Avial Recipe:
Tamarind
paste:
1
tsp
(optional)
Green
Chillies:
7-8
Red
Chilli
Powder:
'
tsp
Turmeric
Powder:
¼
tsp
Grated
Fresh
Coconut:
1
medium
size
cup
Seasoning For Avial Recipe:
Coconut
Oil:
2
tbsb
Cumin
Seeds:
¼
tsp
Curry
Leaves:
8-10
Method:
Cook
the
vegetables
in
boiled
water
to
which
a
little
salt
has
been
added.
Grind
all
the
masala
ingredients
to
a
fine
paste.
Heat
coconut
oil
in
a
thick
pan.
Add
curry
leaves.
Add
the
ground
masala
to
this
oil.
Tip
in
the
vegetables
and
cook
again.

lid
closed)
Check
consistency,
add
water
and
salt
if
required.
