Aloo Gobi Masala Recipe For Diwali
What are you planning to include in your Diwali menu this year? Sweets are of course an integral part of the festival. But apart from that even your main course menu needs proper planning, especially if you have guests coming over. Our idea is to keep the menu simple and full of delicious items. You can come up with some of the lip-smacking recipes to serve your guests on Diwali without spending too much time in the kitchen.
Keeping this in mind, here is a simple vegetarian recipe of aloo gobi masala. This recipe can be prepared in a variety of ways. Here is a spicy version of the recipe which is sure to delight your guests as well as your family members. A fine blend of Indian spices is used to make this Diwali special recipe. The use of dry mango powder adds the tangy kick which makes this dish all the more delectable.

Ingredients
- Cauliflower- 1 (medium, cut into medium sized florets)
- Potatoes- 3 (medium, cut into medium sized pieces)
- Green peas- 1 cup
- Onion- 1 (finely chopped)
- Ginger-garlic paste- 2tsp
- Tomatoes- 2 (finely chopped)
- Cumin seeds- 1tsp
- Bay leaf- 1
- Hing (asafoetida)- a pinch
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Cumin powder- 1tsp
- Coriander powder- 2tsp
- Dry mango powder- 1tsp
- Garam masala powder- ½ tsp
- Salt- as per taste
- Oil- 2tbsp
- Coriander leaves- 2tbsp (chopped)
- Water- ½ cup
Procedure
- Wash the cauliflower in lukewarm salt water and keep it aside for some time. Cut the potatoes and leave it in water.
- Heat oil in a pan and add cumin seeds, bay leaf and hing. Saute the ingredients for a minute.
- Add in the onions and saute for 4-5 minutes on a medium flame.
- Then add ginger-garlic paste and cook for 2-3 minutes.
- Add tomatoes, turmeric powder, red chilli powder, cumin powder, dry mango powder, coriander powder, salt and cook for another 5-6 minutes.
- Now mix in the green peas, cauliflower florets and potato pieces with the masala and cook for about 5-6 minutes.
- Make sure all the vegetables are properly coated with the masala.
- Then add some water, cover and let it cook for 7-8 minutes on a low flame.
- Once done, remove the lid and add garam masala powder. Mix the mixture well.
- Switch off the flame and garnish the curry with chopped coriander leaves.
Delicious aloo gobi masala is ready to be served. This curry tastes best with parathas or rotis.
