Savoury Bread Pudding Recipe
Weekend is the time when we get to eat our meals together as a family and I really look forward to it. Throughout the week I look out for dishes which everyone will enjoy eating and I usually end up cooking Indian as that is the favourite choice. But this time I decided to make this bread pudding with lots of veggies hidden inside it and to my surprise, both my husband and son loved it.
Very easy to put together, this bread pudding is a perfect recipe for a brunch or for a family dinner as well. I used the Brioche bread that I baked recently to make this pudding. You can use any bread of your choice. So here is how I did it.
Ingredients
Olive
oil-
1tbsp
Garlic-
8-10
cloves
(chopped)
Onion-
1
cup
(chopped)
Mixed
vegetables-
2
cups
(I
used
a
mix
of
red,
yellow
and
green
bell
peppers,
mushroom,
broccoli,
spring
onions
and
zucchini)
Dried
thyme-
1
tsp
Dried
basil-
1
tsp
Chilli
flakes-
1
tsp
Salt
to
taste
Eggs-
4
Milk-
2
cups
White
wine-
½
cup
(optional)
Black
pepper-
½
tsp
Cheddar
cheese-
½
cup
(grated)
Bread
slices-
10-12
(cut
into
small
pieces)

Method of preparation
Heat
olive
oil
in
a
pan.
Add
garlic
cloves
and
fry
for
30
seconds.
Add
onion
and
fry
till
golden
brown.

Method of preparation
Add
all
the
vegetables,
dried
thyme,
dried
basil,
chili
flakes
and
salt.
Cook
for
2
minutes.
Remove
from
heat.

Method of preparation
In
another
bowl,
whisk
together
eggs,
milk,
black
pepper
and
white
wine.
In
a
large
bowl,
add
bread
pieces
and
cheddar
cheese.
Mix
the
sauteed
vegetables
with
the
bread.

Method of preparation
Pour the egg mixture on top of the bread pieces and mix well.

Method of preparation
Cover
the
bowl
with
a
cling
film
and
refrigerate
for
8-10
hours.
Pre
heat
the
oven
to
180
degrees
C.

Method of preparation
Transfer
the
bread
mixture
to
an
oven
proof
dish.
Bake
for
40-45
minutes
till
the
crust
is
golden
brown.
Serve
hot.
