Vegetable Kathi Roll: Breakfast Recipe

A kathi roll is a speciality of Kolkata. Kathi means bamboo skewers. During the colonial rule the kebabs were used to be served on these bamboo skewers and since then the name kathi came into existence and slowly became synonymous with any kind of paratha which is rolled with stuffing. Hence the name kathi roll was coined.

Traditionally a kathi roll is kebab wrapped in a layered paratha. However with many improvisations, kathi roll has become quite versatile. The stuffing can always be experimented with. Vegetarians can use veggies while non vegetarians may add a few chicken pieces.

Vegetable Kathi Roll: Breakfast Recipe

Ingredients

  • Whole wheat flour- 3 cups
  • All purpose flour- ½ cup
  • Salt- as per taste
  • Mixed vegetables (carrots, capsicum, beans etc.)- 1 cup (chopped)
  • Onion- 1 (chopped)
  • Turmeric powder- a pinch
  • Chaat masala- 1tsp
  • Ginger-garlic paste- 1tsp
  • Lemon juice- 1tbsp
  • Oil- 1tbsp
  • Water- 1 cup

Procedure
1. Mix whole wheat flour, all purpose flour and salt together. Knead it into a semi-soft dough.
2. Heat oil in a pan and saute the onions till they turn golden brown.
3. Add all the vegetables one by one. Fry for 5-6 minutes on medium flame.
4. Add ginger-garlic paste, turmeric powder, chaat masala, lemon juice, salt and fry for another 5 minutes.
5. Sprinkle some water if needed. Cover and cook on low flame for 10 minutes.
6. Once done, remove this stuffing from the flame and let it cool.
7. Roll out chapatis from the dough.
8. Once the stuffing cools down completely, put it at the centre of the chapati and wrap it up.
9. Cover it with a silver foil and serve.
