Roasted Potatoes: Breakfast Recipe

Who doesn't like potatoes? In most of the houses, you will find at least one potato dish in a meal everyday. Be it breakfast, lunch, snacks or dinner, potato is one of the chief ingredients used in the Indian cuisine. As parathas are the significant and staple breakfast dish in most of the Indian homes, you can prepare some delicious and easy to prepare potato side dish.

There are many potato side dish recipes which can be light or too heavy for the meal. If you are running out of time, then you need to try something that is easy to cook and prepare. Thus, here is a roasted potatoes recipe. It is one of the most popular and easy to prepare breakfast side dish recipe. Boiled potatoes are peeled and then roasted with aromatic spices like turmeric powder, coriander powder and red chilli powder. Check out this breakfast recipe.

Roasted Potatoes: Breakfast Recipe

Ingredients

  • Potatoes- 3-4
  • Onions- 2 (sliced)
  • Tomato- 1 (chopped)
  • Garlic- 3-4 pods (chopped)
  • Green chillies- 2 (chopped)
  • Turmeric powder- 1tsp
  • Red chilli powder- 1tsp
  • Coriander powder- 1tsp
  • Cumin seeds- ½ tsp
  • Jeera (cumin seeds) powder- ½ tsp
  • Salt- as per taste
  • Oil- 2tbsp

Procedure

  • Wash the potatoes. In a pressure cooker, add the potatoes with water and pressure cook for the duration of two whistles.
  • Once done, open the lid after it cools. Strain the boiled potatoes and peel them. Cut into slices and keep the boiled potatoes aside.
  • Heat oil in a medium sized pan. Season with cumin seeds.
  • When the seeds start to splutter, add onions, green chillies and garlic.
  • Mix well and saute on a medium flame for 4-5 minutes. Sprinkle salt and turmeric powder.
  • When the onion turns golden brown, add tomatoes and mix well. Cook for two minutes more on a medium flame.
  • Sprinkle red chilli powder, coriander powder, cumin seeds powder and mix.
  • Now add the boiled potatoes and mix well so that the ingredients are evenly mixed. Cook for another minute.

Roasted potatoes are ready to eat. Serve it hot with parathas or boiled rice.
