Bengali Mishti Pulao
Bengali mishti pulao is one rice dish which you just cannot resist eating. In Bengali 'mishti' means sweet. Bengali mishti pulao is a mildly sweet, aromatic and a flavoured rice recipe which is generally prepared in special occasions like festivals and marriages. The best part of bengali mishti pulao is that you can have it with your choice of gravy or you can simply relish it all by itself like a sweet dish.

Bengali mishti pulao is generally prepared with basmati rice because of the breathtaking aroma of this rice. However it tastes best when prepared with the special kind of bengali rice called 'Gobindo bhog'. You can further enhance the taste of this exotic and delicious rice recipe by adding some green peas. Preparation time: 30 minutes
Cooking time: 20 minutes
Ingredients
- Basmati rice- 2 cups
- Turmeric powder- 2tsp
- Sugar- 3tbsp
- Cloves- 4
- Green cardamom- 4
- Bay leaf- 1
- Cashew nuts- 2tbsp (broken)
- Raisins- 2tbsp
- Ghee- 1tbsp
- Water- 4 cups
- Salt- as per taste
Procedure
- Clean, wash and soak the rice for 30 minutes. After that, drain the water from the rice and keep it aside.
- Heat ghee in a pan and add cloves, cardamoms, bay leaf and fry for a minute.
- Now add the rice, turmeric powder, sugar and salt one by one.
- Mix lightly and cook for 3-4 minutes on a medium flame.
- Add water, cashew nuts and raisins.
- Bring it to boil, reduce the heat to low, cover and cook for about 15 minutes till the rice is completely cooked.
- Once done, switch off the flame and transfer the pulao into a serving plate.
Bengali mishti pulao is ready to be served. You can eat it all by itself or try it out with chicken or mutton curry.
