Paal Payasam: A Must Try Recipe This Diwali
Paal payasam is a popular dessert in Kerala. Thick, creamy, and light pink, paal payasam is a rich kheer made with full creamy milk in which rice is cooked till it becomes soft.
The recipe for paal payasam is easy and quick. Paal payasam is made from pure milk and is served after 'sadya', especially during auspicious occassions. No South Indian feast is complete without the thick and creamy paal payasam or the kerala paal payasam.

All you need
Full
cream
milk-

ltrs
Sugar-

cups
Raw
rice/
Basmati
Rice-

tbsp
Powdered
elaichi-1
/2
tbsp
Cashew
nuts-

nos.
(fried
in
ghee)
Condensed
milk-
2
tbsp
(optional)
Procedure
1.
Soak
the
rice
for
half
an
hour,
and
drain
it
well.
2.
Boil
the
milk
in
a
heavy
bottomed
vessel.
3.
Add
the
boiled
rice
to
the
milk
and
cook
continuously.
Keep
stirring.
4.
If
you
are
using
a
pressure
cooker,
then
add
the
milk
and
rice
to
the
cooker
directly
and
pressure
cook
till
you
hear
one
whistle
in
high
heat.
If
it
is
low
flame,
cook
it
for
15-
20
minutes.
5.
Once
the
rice
is
cooked
well,
mash
the
mixture
slightly
with
a
spoon.
When
you
simmer
further,
volume
of
the
milk
will
be
reduced
to
almost
half
of
it's
original
quantity
and
the
mixture
will
turn
into
a
pinkish
tint.
6.
Now,
if
you
want
to,
you
can
add
the
condensed
milk
and
stir
it.
7.
Add
the
sugar
and
elaichi
powder
into
the
mixture.
Remove
it
from
the
heat
and
stir
the
mixture
till
sugar
dissolves.
8.
Garnish
the
paal
payasam
with
fried
cashew
nuts.
9.
This
yummy
dessert
can
be
served
hot
or
chilled.

made
from
milk.
Hence,
it
is
rich
in
calcium
and
proteins.
Cashewnuts
are
high
in
calories.
But
on
this
festive
season,
your
diet
can
be
excused!

hence
help
in
the
