Kajjaya Recipe – Tasty Snack
Kajjaya Recipe is one of the most famous sweet recipe of Karnataka (South India). This deep fried snack is prepared with Rice and Jaggery during festivals like deepavali (diwali) and Tulsi. The fried sweet bread is prepared on the festive day is first offered to the lord (Neivedhyam) and then the prasadam is relished by all family members. The traditional recipe is a hot favorite recipe of every household in South India and many songs (Bisi Bisi Kajjaya maadi kodale) and quotes (Kaasige Thakka Kajjaya) in Kannada make a mention of this sweet delicacy. The sweet is also called "Ariselu" in Andhra Pradesh and is prepared during Makara Sankranti and Ugadi festivals. The "Ariselu" recipe is also prepared in Marriages and accordingly there has been a superstitious that if the dessert hasn't come out well, it is believed that the marriage would take place in a bad wheather condition. This tasty sweet bread may need not be had right away but can also be preserved for atleast a week in an air tight container. To know on how to prepare the tasty Kajjaya recipe take a look.
Kajjaya Recipe -
Ingredients :
1.1 cup Jaggery
2.2 cups Rice flour
3.1 tsp Cardamom powder
4.1 Banana (riped)
5.Oil for deep frying
Method
:
1.Grind Jaggery and heat it in a pan with 1/4 cup water to make a thick syrup and then filter it to remove all the dust and other impurities.
2.Bring the syrup to boil and keep stirring until you get one thread consistency.
3.Then add sifted rice flour into the Jaggery mixture and stir well to make a thick dough. Set aside to cool.
4.Add sliced banana and cardamom powder to the dough and mix well. Keep the dough aside overnight or atleast 8 hours.
5.Heat oil in a pan and make small discs of the dough and deep fry them until dark brown.
6.Drain the excess oil using paper towels.
Enjoy this hot hot deep fried snack with a teaspoon of ghee and also share this most delicious recipe with friends and relatives.
