Apricot Spring Rolls

Ingredients:
250gms Dried Apricot
150gms Sugar
Few strands of Saffron
' Cup of Sugar Syrup
¼ Cup Pomegranate Seeds
Few Wonton Sheets

Method:
Soak dried Apricots overnight and deseed them. In a pan add Apricots and Sugar and cook using little water for 45 minutes on low flame. Keep stirring. Let it form a pudding/halwa consistency. Keep mashing while stirring.

Stuff each Wonton Sheet with a spoonful of the Apricot mixture and roll it and stick the edges with water. Deep-fry the spring rolls until they are golden brown. Slice the spring rolls and garnish with Sugar syrup, Pomegranate and Saffron and serve.
