Kesar Kulfi: An Indian Dessert
Indian dessert recipes are relished all across the globe. They are very simple and at the same time yummy. Kulfi recipes fall among the list of favourites of many Indians. Kulfi recipes are available in a variety of flavours. But a kesar kulfi is among the most popular of them. Kesar (saffron) is among the costliest of all flavouring agents. The fine aroma of kesar gives this kulfi recipe its special touch.
You can also add some dry fruits to this ice cream recipe. But, we will use only pistachios for making kesar kulfi. This is because the two flavours, kesar and pistachios blend well to give out an awesome taste. Try this ice cream recipe at home as this is very easy to make. Here is the recipe for making kesar kulfi.

Ingredients
- Milk- 1 litre
- Sugar- 1-2 cups
- Cardamom Seeds- 1 pinch
- Cream- 1-2 cups
- Condensed Milk- ½ cup
- Kesar- 1-2 pinch
- Pistachios- ¼ cup ( broken into small pieces)
Procedure
1. Take the milk in a deep bottomed frying pan and keep it over a gas oven on a low flame.
2. Let the milk simmer into half the volume. Then add th sugar and cardamom seeds. Stir well for a minute.
3. Now add cream and the condensed milk. Stir the whole mixture for 2-3 minutes.
4. Add the kesar and keep the milk on a low flame for 10-15 minutes. Add the pistachios and then bring it down.
5. Take the ice cream cups and then pour the mixture into them after the milk cools down. Cover the ice cream cups with their lid and insert a stick between them.
6. Let it refrigerate overnight. Next day take the kesar kulfi out of the ice cream cups.
7. You may now have your kulfi.
Serve the kesar kulfi along with some falooda and a seasoning of dry fruits.
