Red Bell Peppers and Eggplant

Ingredients:
150gms Red Bell Peppers, quartered & deseeded
200gms Brinjal/ Eggplant, Cut into 2.5 cm Wedges
2 tbsp Olive Oil
Salt and freshly ground Black Pepper to taste
1 tsp Fresh Thyme or Oregano Leaves (Optional)

Method:
Mix all the ingredients together in a mixing bowl.

Add little water or milk and mix to form dough.

Shape into small balls and bake in a pre-heated oven at 150 - 180 degrees for 15 to 20 minutes.
