Vada Pav: Ganesh Chaturthi Spl Recipe
Ganesh Chaturthi is a special festival celebrated in Maharashtra and Karnataka. That is why; when we speak of Ganesh Chaturthi recipes, some very quintessential Maharashtrian recipes come to the mind. What could be more synonymous with Marathi identity than the vada pav recipe. It is the favourite street food in Mumbai and you will surely enjoy it during the festive season.

Ingredients
- Boiled Potatoes - 2 medium sized
- Cumin seeds - 1/2 tsp
- Green chillies - 1/2 tsp chopped finely
- Mustard seeds - 1/2 tsp
- Ginger garlic paste - 1 tsp
- Onion - 1 medium sized chopped finely
- Turmeric powder - 1/2 tsp
- Coriander leaves - 2 tsp
- Besan or gram flour - 1/4 cup
- Rice flour - 1 tbsp
- Chilli powder - 1/2 tsp
- Salt - to taste
- Baking soda - a pinch
- Oil - to toast / deep fry
- Pav Buns - 4
Procedure
- Heat 2tbsp oil in a pan. Add cumin seeds and mustard seeds; allow it to splutter.
- Add ginger garlic paste to the pan along with chopped green chillies. Saute for 2 minutes on low flame.
- Now add the chopped onions and saute for 3-4 minutes.
- Pour the mashed potatoes into the pan, sprinkle salt and turmeric powder.
- Add chopped coriander leaves and mix up the contents of the pan nicely.
- Cook for 4-5 minutes on a low flame. Then remove the pan from the flame and allow the potatoes to cool.
- When the mixture cools, make round balls out of the cooked mashed potatoes.
- For the batter of the vadas, take besan, rice flour, chilli powder, turmeric, salt and baking soda in a bowl.
- Add half a cup of water and mix it up properly. Now heat oil for deep frying in a deep bottomed pan.
- When the oil starts steaming, dip the potato balls in batter and put them in the oil.
- Deep fry the vadas for 3-4 minutes on a high flame.
- Now, slice the pav breads from the centre and place the crisp vadas inside them.
