Ingredients
- Palak/spinach- 1kg
- Besan/gram flour- 250 gms
- Onion- 1 (chopped finely)
- Green chillies- 3 (minced)
- Ajwain/carom seeds- 1tsp
- Cumin seeds- 1tbsp
- Red chilli powder- 1tsp
- Salt
- Water- 1 cup
- Oil for frying
Procedure
- Wash the palak leaves. Drain the water and then cut the stems. Chop the palak leaves finely.
- In a bowl, mix besan, red chilli powder, onion, green chillies, ajwain, cumin seeds and salt. Add the palak leaves and then make a semi-solid batter. Add water if required to make the batter consistency.
- Heat oil in a frying pan. Wet your fingers with water. Take little amount of batter in your fingers and then slowly drop pakoras in the frying pan. Do not throw the pakoras or else you will burn your skin with hot oil.
- Fry it till the pakoras become crisp and golden brown. It will take 3-5 minutes if you fry on medium flame.
- Strain them and keep the fried palak pakoras in paper towels.
Palak pakoras are ready to eat. Serve it hot with coriander chutney or tomato ketchup. You can even try tamarind chutney. The sweet and salty flavour of this combination can make your brother love this Rakhi recipe. If you are diet conscious, you can use healthy vegetable oils that are low in fats and calories. As it is a festive time, you won't mind having few crisp pakoras on one day!
