Ingredients For Stir Fried Prawns:

1. Prawns-15 to 10 (medium sized pieces)
2. Shallots or baby onions-4 (cut into halves)
3. The stalk of spring onions (chopped into medium pieces)
4. Bell pepper or capsicum-2 (chopped into medium sized pieces)
5. Carrots-2 (chopped into medium sized pieces)
6. Garlic-6 cloves (mashed roughly)
7. Ice berg lettuce or Cabbage leaves
8. Pepper corns-8
9. Ground pepper-1 tablespoon
10. Oregano-1 teaspoon (optional)
11. Dry red chilli flakes-1 tablespoon
12. Olive oil-1 tablespoon
13. Salt as per taste

Procedure For Stir Fried Prawns:

  • Marinate the prawns with salt and a hint of olive oil for about ten minutes before you start cooking.
  • Meanwhile start chopping the vegetables. You need not chop them finely because the whole point of this dish is to enjoy their taste and health benefits a little raw.
  • Heat olive oil in a shallow pan. Heat it just enough to bleed the flavours of the spices because you are actually not supposed to heat olive oil.
  • Add the pepper corns and red chilli flakes to it and let it stay for a minute on low flame. Then add the shallots and cook for 2 minutes.
  • When the baby onions become translucent add the prawns and the mashed garlic. Cook for 2 minutes on medium flame.
  • Now add all the other vegetables and ground pepper (oregano if you like) and stir it for about a minute as it cooks.
  • Sprinkle some salt and cover it. Cook on low flame for 5-7 minutes depending on how well you wish to cook the prawns. Stir occasionally for even cooking.
  • You need not add water because adding salt will make the prawns release stored water.

You can serve the stir fried prawns in a huge leaf of ice berg lettuce in plate for decoration.
