Konkan Style Prawns Recipe

"A lot of recipes from the Konkan belt of India, are handed down through generations and yet, rarely shared outside the family tree. A mother would pass it on to her daughter, who would after marriage carry it with her as her trump card. Here is one such traditional recipe, a very traditional prawn curry based preparation. As long as you don't get overly experimental, this recipe is a sure shot party pleaser.

Konkan Style Prawns Recipe

Serves: 4
Preparation Time: 15 minutes
Cooking Time: 45 minutes

Ingredients

  • Prawns peeled- 1 kg (deveined)
  • Onions- 3 (large, finely chopped)
  • Tomatoes- 3 (large, chopped)
  • Coriander leaves-1 (chopped, large handful)
  • Oil- 4tsp
  • Garlic- 3tsp (crushed)
  • Turmeric- 1tsp
  • Tamarind- 1tsp
  • Red chilli powder-1tsp
  • Cloves- 2
  • Cinnamon stick- ½
  • Salt to taste

Procedure

  • Combine prawns, garlic, turmeric, red chilli powder, tamarind and a teaspoon of salt. Allow the prawns to marinade for 15-30 minutes.
  • In a large, shallow bottomed non-stick pan, heat the oil. Once hot, add cloves and cinnamon stick Wait for about a minute, until they become fragrant.
  • 3. Next, add the onions, and saute for about 5-7 minutes, or until the onions become translucent. Stir frequently to stop the onions from browning or burning.
  • At this point, add the prawns, and stir until they all lose their grey color.
  • Add tomatoes, stir, and allow to simmer for approximately 5 minutes, or until the prawns start to shrink, and oil starts to visibly separate from the sauce.
  • Add coriander leaves, taste and add salt if necessary. Cook for a few more minutes.
  • Serve hot, and enjoy over rice or with chapati.
