Ingredients:

1.11/2 cups whole-wheat rotini

2.2 cups of fresh mixed vegetables like carrot, broccoli, and cauliflower etc (brimmed)

3.1 can of low-sodium light tuna (because of its low fat content)

4.1 cup of low-fat condensed cream of chicken soup (lowest sodium available)

5.1/2 cup roasted red bell peppers (chopped)

6.1/2 cup fat-free half-and-half (mixed beverages)

7.1 teaspoon all-purpose seasoning

8.3/4 cup lightly crushed, low-sodium whole-grain crackers (preferably wheat)

9.1/4 cup Parmesan cheese (grated)

10.Cooking spray

Method:

1.Preheat the oven to 350°F. Sprinkle cooking spray into the casserole dish.

2.Prepare pasta without salt and oil. Drain all the excess water and leave aside.

3.In a bowl, mix vegetables, tuna, cream, roasted pepper, half-and-half, seasoning blend and pasta until combined. Transfer the mixture to the casserole dish. Sprinkle with the crackers and cheese.
