Pepper Mutton Curry Recipe
Pepper mutton is a mutton curry recipe that stands out due to its unusual combination of ingredients and spices. Indian mutton is always associated with 'spiciness' and with the adjective 'spicy' we immediately co-relate a dark red curry. But this mutton curry recipe does not have red gravy, in fact it has very little gravy. We are calling it a mutton 'curry' for the lack of a better word! This is because the staple Indian spice, red chilli powder is not used at all in this Indian mutton recipe. The sole flavoring spice is pepper complimented by green chillies.
Meat lovers would be aware that cooking Indian mutton does require some time and energy because mutton does not cook as easily as chicken. The red meat is hard and needs to be singed over the flame. However, this simple mutton recipe ensures that you you don't have to work too hard. After you marinate the meat for Pepper Mutton you can relax for a couple of hours. The cooking procedure of this mutton curry recipe itself is not too complicated. So you can carry on with your work while the meat cooks slowly but make sure you stir it occasionally lest it get burned from the bottom

Procedure For Pepper Mutton:
- Make a paste of one onion, garlic, ginger and green chillies.
- Marinate the meat with this paste, ground pepper and curd; leave it for a couple of hours. Curd softens the meat and is thus essential. You cannot use tomatoes or vinegar in its stead.
- Heat oil is a deep pan and singe the bay leaves, cumin seeds, cinnamon sticks, peppercorns, cloves and cardamom in the oil.
- Add the marinated mutton, mix well and let cook for 10 minutes.
- Add cumin powder and salt; cook for another 7 minutes.
- Now transfer the half cooked meat gravy into a pressure-cooker, add 3 cups of water and cook.
- Wait for 4-5 whistles and then turn off the flame.
Your delicious Pepper Mutton is ready to be served. It is best eaten with steamed rice or rotis.
