Khajur Gosht: The Taste Of Awadh
Awadhi cuisine has a distinction of its own. The Mughal cooking techniques and the use of fragrant Indian spices make the Awadhi cuisine stand out from the rest in the world of cookery and food. The varieties of kebabs, biryanis, kormas and sweets can only be found in the Awadhi cuisine.
Today we have a special mutton recipe for you straight from the kitchens of Awadh. It is known as the Khajur Gosht which literally means ' dates mutton'. This special mutton recipe is prepared with dry dates which makes it an absolute delight for your taste-buds.

Ingredients
- Mutton- 1 kg (cut into medium sized pieces)
- Dried dates- 12
- Onions- 3 (finely chopped)
- Ginger-garlic paste- 2tbsp
- Cashew nut paste- ½ cup
- Turmeric powder- 1tsp
- Red chilli powder- 1tsp
- Coriander powder- 2tsp
- Green cardamom powder- ½ tsp
- Garam masala powder- ½ tsp
- Lemon juice- 2tbsp
- Bay leaves- 2
- Kewda water- 2-3 drops
- Salt- as per taste
- Oil- 3tbsp
- Ghee- 1tsp
- Water- 1 cup
Procedure
1.
Wash
the
mutton
pieces
thoroughly
with
water.
2.
Heat
one
tablespoon
of
oil
in
a
pressure
cooker
and
bay
leaves.
3.
Then
add
the
chopped
onions
and
fry
for
3-4
minutes
till
they
turn
golden
brown.
4.
Add
turmeric
powder,
cashew
nut
paste,
mutton
pieces,
salt,
water
and
cook
for
5-6
minutes
on
medium
flame.
5.
Close
the
lid
of
the
cooker
and
cook
the
mutton
on
low
flame.
Wait
for
4-5
whistles
to
blow.
6.
Once
done,
remove
the
pressure
cooker
from
heat
and
keep
it
aside.
7.
Heat
the
remaining
oil
in
a
pan
and
add
ginger-garlic
paste.
Saute
for
2
minutes.
8.
Add
red
chilli
powder,
coriander
powder
and
saute
for
another
minute.
9.
Now
open
the
lid
of
the
pressure
cooker
and
pour
the
mutton
along
with
the
stock
into
the
pan.
10.
Add
the
dates
and
mix
well.
Cook
for
6-7
minutes
on
medium
flame.
11.
Mix
in
the
green
cardamom
powder,
garam
masala
powder,
lemon
juice,
kewda
water
and
mix
well.
12.
Cook
for
another
5-6
minutes.
13.
Once
done,
switch
off
the
flame,
add
ghee
and
serve.
Khajur gosht is ready to be served. Enjoy this delicious mutton dish with rotis or pulao.
