Delicious Mutton Dak Bungalow Recipe
Dak Bungalow is an almost forgotten culinary treasure that originated in Bengal. It survives now among only a few remaining khansama(cook) families and Anglo Indian households. Few restaurants and clubs in Kolkata, still serve these dishes to keep this historic cuisine alive.
For those who do not know what "Dak Bungalow" is, it was traveler's rest houses in Bengal, during the British rule, on a "Dak" route. Dak was a mail delivery service and these rest houses were built at various places throughout the route. British officers used these bunglows to rest while on a hunting trip or during summer vacations.

These dak bunglows used to have their own small farms, both for meat and milk. The animals killed during the hunting trips were also cooked and served to the officers. A Khansama(cook) used to handle the kitchen in these bunglows and they used to cook with available ingredients and with freshly ground spices.
So, here is the recipe of mutton Dak Bungalow or Dakbangla which is sure to make your taste-buds crave for more.

Ingredients
- Mutton- 1kg
- Onions- 6 (sliced)
- Ginger-garlic paste- 1tbsp
- Tomatoes- 2 (finely chopped)
- Yogurt- ½ cup
- Turmeric powder- 1tsp
- Red chilli powder- 2tsp
- Garam masala powder- 1tsp
- Salt- as per taste
- Sugar- ½ tsp
- Eggs- 4 (boiled)
- Cinnamon stick- 1
- Green cardamoms- 8
- Bay leaf- 1
- Mustard oil- 2tbsp
- Ghee- 1tbsp
Procedure
1.
Clean
and
wash
the
mutton
pieces
properly
with
water.
2.
Heat
mustard
oil
in
a
pan
and
add
cinnamon,
cardamoms,
bay
leaf
to
it.
Fry
for
a
minute.
3.
Then
add
the
onions
and
fry
for
4-5
minutes
till
they
turn
golden
brown.
4.
Add
ginger-garlic
paste
and
fry
for
2-3
minutes.
5.
Then
add
the
chopped
tomatoes,
turmeric
powder,
red
chilli
powder
and
garam
masala
powder
to
the
pan.
Cook
for
3-4
minutes.
6.
Whisk
the
yogurt
with
sugar
and
pour
it
into
the
pan.
Stir
immedieately
to
avoid
formation
of
lumps.
7.
Add
salt
and
the
mutton
pieces
to
the
pan.
Cover
and
cook
for
15-20
minutes
on
low
flame.
8.
In
another
pan
add
one
teaspoon
of
oil
and
fry
the
boiled
eggs
with
salt
and
a
little
turmeric
powder.
9.
When
it
turns
golden
brown
then
switch
off
the
flame
and
keep
it
aside.
10.
Once
the
mutton
gets
cooked,
add
ghee
and
cook
for
1-2
minutes
and
then
switch
off
the
flame.
11.
Garnish
the
mutton
curry
with
the
fried
eggs
and
serve.
