Chettinad Mutton Kulambu Recipe

The main trick of this mutton recipe is to get the quantity of the masala right. The masala paste lends the whole flavour to this recipe.

Ingredients
- Mutton- ½ kg (cut into pieces)
- Cinnamon stick- 1
- Cloves- 2
- Cardamoms- 2
- Star anise- 1
- Onions- 2 (finely chopped)
- Ginger-garlic paste- 2tsp
- Turmeric powder- 1tsp
- Tomatoes- 2 (chopped)
- Coconut milk- 1 cup
- Salt- as per taste
- Water- 1 cup
- Coriander leaves- 2tbsp (chopped)
- Oil- 3tbsp
For Masala Paste
- Cinnamon stick- 1
- Cloves- 2
- Cardamom- 2
- Cumin seeds- 1tsp
- Fennel seeds- 1tsp
- Dry red chillies- 5
- Coriander seeds- 3tsp
- Coconut- 3tbsp (grated)
- Cashews- 5
Procedure
1.
Wash
the
mutton
pieces
properly
and
then
marinate
it
with
turmeric
and
salt.
Keep
it
aside.
2.
Heat
a
pan
and
dry
roast
all
the
ingredients
listed
under
'for
masala
paste'
for
about
3-4
minutes
on
medium
flame.
3.
Switch
off
the
flame
and
then
let
the
masala
cool
down
completely.
Grind
the
ingredients
with
about
half
a
cup
of
water
in
a
mixer
into
a
thick
paste.
4.
Heat
oil
in
a
pan
and
add
cinnamon,
cloves,
cardamoms,
star
anise
and
onion.
Fry
for
about
4-5
minutes
on
medium
flame
till
the
onions
turn
golden
brown.
5.
Add
ginger-garlic
paste
and
fry
for
2
minutes.
6.
Add
chopped
tomatoes
and
the
prepared
masala
paste.
Cook
for
5-6
minutes
on
medium
flame.
7.
Now
add
the
marinated
mutton
and
mix
well.
Add
salt
and
water.
8.
Close
the
lid
of
the
pressure
cooker
and
let
it
cook
on
low
flame.
Allow
4
whistles
to
blow.
9.
After
4
whistles
switch
off
the
flame
and
let
the
steam
come
out.
10.
Once
the
steam
comes
out
completely,
add
coconut
milk
to
the
mutton.
Switch
on
the
flame
again
and
bring
the
curry
to
boil.
11.
Let
the
curry
cook
for
5
minutes
on
low
flame.
12.
Once
done,
switch
off
the
flame
and
garnish
with
chopped
coriander
leaves.
