Hot N Spicy Andhra Style Mutton Curry

All Andhra recipes are very hot and spicy; theyare not meant for people who cannot stand spicy food. Thus the Andhra mutton curry is no exception. This mutton curry recipe is rich in spices and has lots of different flavours. In short, the Andhra mutton curry can be stated as an example of the typically spicy Indian curry. To Andhra style mutton curry, the meat is first boiled. Then the boiled meat is cooked in a thick and spicy gravy.

It is relatively simple to make Andhra style mutton curry. This mutton curry recipe requires you cook the mutton and the gravy separately at first; that is the only trick. You can easily try this Andhra recipe at home even if you do not belong to this region.

Andhra Mutton Curry

Ingredients

  • Mutton- 700 grams (cut into medium sized pieces)
  • Turmeric- 1/2 tsp
  • Black peppercorns- 10
  • Green cardamom- 5
  • Fennel seeds- /2 tsp
  • Poppy seeds- 1tsp
  • Coriander seeds- 1tsp
  • Cumin seeds- 1tsp
  • Cinnamon- 1 inch
  • Cloves- 5
  • Onions- 2 (chopped)
  • Ginger garlic paste- 1tbsp
  • Tomato- 2 (chopped)
  • Red chilli powder- 1tsp
  • Black pepper powder- 1tsp
  • Curry leaves- 10
  • Salt- as per taste
  • Oil- 2tbsp

Procedure

  1. Boil the mutton with salt, turmeric and 3 cups of water in a pressure cooker. Cook for the duration of 4 whistles.
  2. Strain the mutton pieces from the cooker and keep them aside.
  3. Now roast poppy seeds, cumin seeds, coriander seeds, black pepper, cloves, cardamom, cinnamon and fennel seeds on a dry pan.
  4. After roasting these ingredients for 1 minute, take them off the flame and allow them to cool.
  5. Once it cools to room temperature, grind all the roasted spices together.
  6. Heat oil in a deep bottomed pan. Season it with curry leaves.
  7. Saute the onions in the pan for 5-6 minutes on low flame.
  8. Then add ginger garlic paste and cook for 2 minutes
  9. Pour the chopped tomatoes and season with salt. Allow the tomatoes to turn to pulp.
  10. Now add the boiled pieces of meat, pepper powder and the ground masala.
  11. Stir to mix and cook for 5 minutes on low flame.
  12. Add red chilli powder and 2 cups of water. Stir in the water to mix properly.
  13. Cover and cook for 10 minutes on low flame.

Serve Andhra style mutton curry with hot rotis or steaming rice.
